General description: Not only the orange coloured rind but also the whole cows milk cheese takes the smell of alpine hay and herbs in which this cheese is wrapped.

Organoleptic properties: Crème-white inside and irregular holes are typical together with a sweet-spicy taste where the hay is distinctive. Soft-elastic consistency with a distinct flavour of hazelnuts. Very persistent.
